RED BEANS AND RICE 
1 lb. dry kidney beans, rinsed and sorted
10 c. water, divided
1 lb. ham, cubed
2 bay leaves
1 lg. red pepper
2 Spanish onions, chopped
3 cloves garlic, minced
1 c. chopped celery with leaves
1 tbsp. chili powder
2 tsp. Italian seasoning
1 packet ham flavored concentrate
Dash Worcestershire sauce
1 1/2 c. sliced scallion
1/4 c. red wine vinegar
1 1/2 c. uncooked broccoli
4 oz. extra sharp Cheddar cheese, shredded

Soak beans overnight in 6 cups of water, rinse. Four cups water next 10 ingredients; simmer uncovered. When done add scallion to pot. Simmer 10 - 15 minutes. Stir in vinegar. Serve over rice and sprinkle each serving with cheese.
