BLACK BEAN CHILI 
1 tbsp. olive oil
2 onions, peeled and chopped
1 red pepper, seeded and diced
1 green pepper, seeded and diced
2 minced garlic, cloves
2 minced jalapeno peppers (pickled or canned)
Salt
2 tbsp. ground chili
2 tsp. ground cumin
1/2 tsp. oregano
1/2 tsp. cinnamon
1 (14-16 oz.) can tomatoes, drained
2 (16-19 oz.) cans black beans, drained and rinsed
Sliced scallions and grated Cheddar cheese (for garnish)

Heat oil in non-stick pan over medium heat. Add onions, bell peppers, jalapeno peppers, garlic, and salt. Saute the mixture, tossing until softened. Add herbs and spices; saute 2 minutes longer. Add tomatoes and simmer briefly until slightly thickened. Add beans; cover and simmer over low heat 15-20 minutes. Serve topped with scallions and grated cheese.
