WINE AND CHEESE DRESSING 
3 clove garlic, minced & mashed
1 tsp. freshly ground pepper
2 tsp. salt
1 cup olive oil
1/2 cup Sauterne wine
1/4 cup cider or wine vinegar
1/4 cup crumbled blue cheese
1 cup buttermilk
1 tbsp. pectin or Clear Jel

Put all ingredients into a blender container. Cover and process at high speed until smooth and creamy.

Yield: 3 cups.
