LAYERED GREEN SALAD 
1 head dark green leafy lettuce of choice
2 c. purple cabbage, shredded
2 c. carrots, shredded
2 c. frozen peas
Mayonnaise, low fat or ranch dressing
Sugar (opt.)

GARNISHES:

Tomato wedges or cherry tomatoes
Avocado wedges
Baco bits

Fill large, clear glass bowl three quarters full with torn lettuce, slightly pressed down. (Tearing prevents browning of lettuce.) Layer cabbage, carrots, and peas in this order. Top with 1/2" layer of mayonnaise. Sprinkle lightly with sugar. May use ranch dressing instead of mayonnaise and sugar. Refrigerate overnight to blend flavors. (This is important if using mayonnaise and sugar topping.) Garnish just before serving. Serves 8 to 10.
