ZUCCHINI PAN ROLLS 
1 pkg. yeast
1/2 c. warm water
3 1/2 c. flour
1/2 tsp. salt
1 c. warm water
2 tsp. honey
2 tbsp. vegetable oil
2/3 c. zucchini, grated and drained

Dissolve yeast in 1/2 cup warm water. Sift flour and salt. Add 1 cup warm water, honey and vegetable oil and yeast mixture to flour mixture. Mix well. Add zucchini. Knead dough about 10 minutes. Let rise until doubled, knead lightly. Shape into rolls. Let rise about 30 minutes. Preheat oven to 400 degrees, then lower to 375 degrees for 15-20 minutes. Use a 9x13x2 inch pan.
