CARROT BALLS 
1 lb. carrots, cooked & mashed
2 eggs, well beaten
2 tbsp. all-purpose flour
1 tbsp. butter, melted
1/2 tsp. salt
Hot vegetable oil

Combine all ingredients except vegetable oil; mix well. Shape into 1 inch balls and fry in deep oil until golden brown.
