CHICKEN CRACKER BALL SOUP
chicken any parts (cooked and boned)
1 box of saltine crackers
6 eggs
2 c. milk
salt and pepper to taste
you may add carrots, celery, and onion if you wish just like regular chicken noodle soup.

Cover chicken with water. Add chicken stock, cover and simmer until chicken is done. Remove and debone. Crush (the whole box)crackers in blender or use a food processor, until they look like sand.

Put into a bowl, add eggs mix slowly. Add the milk until moist. Roll into balls, larger than marbles, smaller than a ping pong balls.

Bring the soup to a boil and add the balls.

Cover and simmer for 15 minutes. Replace the chicken and enjoy.

That is called Matzo Ball soup. This has been around for hundreds of years. You use crushed Matzos or matzo meal. As said this is delicious.

My grandmom and mom used Uneeda Biscuits and we pulverized them to fine sand like texture with a rolling pin on a clean dish towel. Very tedious but very tasty! Uneeda Biscuits long gone.

My nanny used Uneeda biscuits too. We also added sour cream in the broth.

I want to thank you for submitting this amazing recipe! I haven't made traditional Matzo balls because the meal is very costly. A box of crackers at Walmart costs only 0.77 so you can't beat that!

We don't keep Kosher. This is my go to recipe for a warm delicious Mock Matzo ball soup! :)

Ive been making this for 35 years and didn't have a recipe to give a friend, just a bit of this and a bit of that. I found your recipe and the difference is instead of milk use chicken broth in cracker balls and mince 2 celery stems and one small onion and add that to cracker mix. Have a plate of butter nearby to grease up hands so cracker mix doesn't stick. So yummy and rich!
