CARROT BALLS 
2 c. cooked & mashed carrots
1/2 c. grated cheese
2 eggs, slightly beaten
2 tsp. grated onion
1/2 tsp. salt
1/8 tsp. pepper

Combine all ingredients. Shape into balls about 1 1/2 inch diameter.

Roll in egg and crumbs and fry in deep hot fat (375 to 385 degrees) until browned. Drain. Can also be made into little patties and fried in a frying pan.
