CHICKEN A LA DIVAN 
3 c. cooked fresh broccoli spears or 2 (10 oz.) pkgs. frozen broccoli spears, cooked & drained
1 1/2 lbs. sliced, cooked chicken breast
1 1/2 lbs. sweet unsalted butter
3 tbsp. all purpose flour
1 1/2 c. skim milk
6 tbsp. Egg Beaters
2 tbsp. sherry (dry)
Paprika

Arrange broccoli in the bottom of a 2 quart shallow baking dish or 6 individual baking dishes. Place chicken slices over broccoli. Cover with foil and bake at 350 degrees for 20 minutes or until hot. Melt butter in saucepan. Blend in flour. Cook over low heat, stirring until smooth and bubbly. Remove from heat and gradually stir in milk. Return to heat and bring to a boil, stirring constantly. Gradually blend about 1/2 the hot mixture into Egg Beaters, then combine with remaining hot mixture. Stir in sherry. Spoon sauce over chicken and broccoli; sprinkle lightly with paprika and serve. Makes 6 servings.
