SPRINGERLES 
4 eggs
1 lb. powdered sugar
1 tbsp. grated lemon rind
4 1/2 c. sifted cake flour
1 tsp. baking powder
Anise seeds
Picture cookie roller or board

Beat eggs until light. Add sugar and beat thoroughly. Add lemon rind and flour, which has been sifted with baking powder and mix thoroughly. Chill one hour, then roll out to 1/2 inch thickness on floured surface. Make picture designs by pressing picture cookie board or roller well into dough. Grease cookie sheets and sprinkle with anise seeds. Put cookies on sheets and expose to air for 12 hours. Bake at 350 degrees for 30 minutes. When cool, store in covered container 2 to 3 weeks before serving.
