SPRINGERLE COOKIES 
4 eggs
3 1/2 c. flour
1 lb. powdered sugar
1 tsp. baking powder
1 tsp. anise seeds

Beat eggs until thick and lemon colored. Add sugar and continue beating 1 hour by hand or 15 minutes with electric mixer. Add flour, mixed with baking powder and anise seeds gradually, continuing beating. Chill 1 hour. Roll out 1/2 inch thick. Press well floured springerle molds down hard to emboss designs. Cut out the squares and let stand in cool room 10 hours or overnight. Bake on greased and floured tin about 15 minutes at 350 degrees. Cookies should not brown.

This recipe is exactly as my German grandmother made it over 70 years ago... however you have left out the most exciting ingredient..... 1 tbsp. of lemon zest!!!!
