SPRINGERLE 
4 extra lg. eggs
1 lb. confectioners' sugar, sifted
4 c. cake flour, sifted
1 tsp. baking powder
3 or 4 drops anise oil

Beat eggs until lemon colored, about 5 minutes on electric mixer. Gradually add sugar, mixing well after each addition. Add anise oil. Add sifted flour and baking powder, a small amount at a time. Chill covered dough 1 hour. Roll small amount of dough to about 1/4 inch (no less). Then use a springerle rolling pin to put the picture on cookie.

Cut out individual cookies and put on ungreased cookie sheet. Let stand out overnight and bake at 350 degrees for about 8 minutes. Do not let brown. Store in airtight container. (I put a piece of bread in container to keep cookies soft.)
