2 lb. potatoes, peeled && shredded 1 lg. onion, minced 3 tbsp. flour 2 eggs, lightly beaten 1 1/4 tsp. salt 1/4 tsp. baking powder Oil for frying In bowl combine all ingredients except oil. Drain in colander. In large skillet heat 1/4 inch oil over high heat. Drop potato mixture by level tablespoonfuls into hot skillet. Brown 1-2 minutes per side. Keep warm. Repeat with remaining mixture. Can be made ahead. Cool and refrigerate covered up to 24 hours. Reheat on cookie sheet in preheated 400 degree oven for 5 minutes. |
