POTATO LATKES 
2 lg. potatoes
1/2 onion
1 egg
1/4 c. flour
1 tsp. salt
Oil or butter

Peel potatoes and onion. Grate, then add together. Add flour, salt and egg. Mix thoroughly until smooth. Grease the frying pan. Drop batter into hot frying pan, making each pancake about 3 inches in diameter. Fry until crisp and brown on each side. Lift from skillet and place on paper towels until oil drains. Serve with applesauce.
