IRISH SODA BREAD 
5 c. sifted flour
5 tbsp. caraway seeds
1 level tsp. baking soda
2 level tsp. baking powder
2 1/2 c. raisins (light or dark)
3/4 c. sugar
2 1/2 c. buttermilk
1 1/2 tsp. salt
1 egg, slightly beaten
1 stick butter

Soak the raisins for at least an hour. The raisins expand. Stir together the flour, sugar, baking powder, salt and baking soda.

Cut in butter as for pie dough and until mixture looks like cornmeal. Stir in raisins and caraway seeds, if this be your choice.

Add buttermilk and egg to the dry ingredients, blending only until all of the flour is moistened.

Generously butter two bread pans. Bake at 350 degrees for about an hour or until done.
