PASTRY 
1 c. all purpose flour
1/3 c. shortening
1/4 tsp. salt
2 tbsp. cold water
1 oz. (1/4 c.) shredded cheddar cheese

Mix the flour and salt, then cut in shortening with a fork or pastry blender until it looks like coarse meal. Add cheese, stir to mix and sprinkle the cold water, 1 tablespoon at a time, evenly. Stir with a fork until mixture is evenly moistened. Shape the dough into a ball and roll out for cobbler pastry. This is excellent with Fig Cobbler.
