CHERRY BLOSSOM MUFFINS | |
1 slightly beaten egg 2/3 c. orange juice 2 tbsp. sugar 2 tbsp. oil 2 c. packaged biscuit mix 1/2 c. chopped pecans 1/2 c. cherry preserves In a mixing bowl, combine egg, orange juice, sugar and oil. Add biscuit mix and beat vigorously for 30 seconds. Stir in nuts. Grease or paper line 12 muffin pans. Fill pans 1/3 full. Top each with 2 teaspoons cherry preserves. Cover with remaining batter until 2/3 full. Sprinkle with SPICY TOPPING (Recipe following). Bake in 400°F oven for 20 to 25 minutes. Makes 12 muffins. SPICY TOPPING: Combine 1/4 cup sugar, 2 tablespoons flour and 1/2 teaspoon ground nutmeg. Cut in 1 tablespoon butter until crumbly. Sprinkle on muffins before baking. Note: This recipe makes muffins - not pastries and is not to be confused with any commercially available pastry. |
