BEEF ROLLODEN 
Utensils - toothpicks, fry pan Dutch oven with lid
2 or 3 nice round steaks
1 lb. bacon
Onions
Bay leaf
Dill pickles
Salt and pepper to taste
Flour for dusting
Vegetable oil for browning
Button mushrooms (optional)

Pound meat. Cut meat into 2 x 4 inch strips. Cut bacon into 4 inch lengths. Slice onion into 2 inch strips and pickles into 2 inch strips. Set aside. Place Dutch oven on back burner with 2-3 inches deep water with 2 bay leaves and 1 onion sliced. Simmer and cover.

Assemble "Rolladen" by taking pieces of meat, lay bacon on length of strip. At one end, place piece of pickle and onion. Roll up and secure with toothpicks. Dust or roll in flour mixed with salt and pepper. Brown in fry pan and then transfer to covered Dutch oven. Let it simmer on low 1-2 hours (adding water when necessary to make gravy). Add mushrooms; simmer 10-15 minutes. Serve on platter with gravy on the side. Serves 6-9.
