SWEET PICKLED WATERMELON RINDS 
Rinds from watermelon
1 pt. vinegar
1 lb. sugar
Mace
Allspice
Cloves
Cinnamon stick

Prepare rinds and put into weak vinegar and water (to cover). Let soak 12 hours; then boil them tender in the same water; drain well! Prepare to 1 pint vinegar, sugar, mace, allspice, cloves and cinnamon stick; put the rinds into clean jars, then cover with prepared mixture that has been cooked to hot stage.
