MIXED SHELLFISH AU GRATIN 
1/2 c. butter
1/2 c. flour
1 qt. milk, scalded
1/2 tsp. salt
1/2 tsp. dry mustard
1/2 c. sherry
1 tsp. Accent
2 tsp. Worcestershire sauce
1/2 lb. lobster
1/2 lb. crab
1/2 lb. shrimp
1/2 c. grated cheese
Cracker crumbs

Melt butter, add flour and stir until slightly brown. Add scalded milk slowly and stir until mixture bubbles. Continue stirring until any lumps disappear (you may want to use portable mixer to blend until smooth). Add spices and wine. Arrange layers of seafood and sauce in casserole. Top with cracker crumbs and cheese. Cook in 350 degree oven for 20 minutes or until heated through and cheese is melted. Serve in prepared pastry shells or over rice or over toast points. NOTE: Use only fresh seafood which has been cooked and cleaned. Also more seafood may be added to extend the amount.
