MOM'S FILLED COOKIES | |
1/3 c. shortening 1 c. sugar 1 egg 1/2 c. milk 1 tsp. vanilla 3 1/2 c. flour 1/2 tsp. salt 4 tsp. baking powder FILLING: 2 tsp. flour 1/2 c. sugar 1/2 c. chopped figs 1/2 c. water 1/2 c. chopped raisins Make filling first and cool. To make filling: Mix flour, sugar, add water and fruit - cook until thick. Do not burn. Cream the shortening, add sugar, beaten egg, milk and vanilla. Add flour, salt and baking powder which has been sifted together. Roll out thin on slightly floured board and cut with round cookie cutter. Place 1 teaspoon of filling on each cookie. Cover with another cookie - press edges together. Bake in moderate oven (325 degrees or less) for 12-15 minutes. |
