HEARTFELT POTATO SALAD 
8 med. sized potatoes, boiled with jackets on, firm
4 eggs, hard boiled & peeled, using whites only
2 or 3 strips of celery
Bunch of fresh chives, cut or 3 scallion stalks
3/4 - 1 c. no cholesterol salad dressing (no cholesterol Miracle Whip)
Bit of salt or Mrs. Dash
Pepper to taste

Peel the boiled potatoes. Cube them into mixing bowl. With a paring knife cut the whites of the hard boiled eggs into the cut up potatoes. Cut strips of celery into small pieces and put them into a hand onion chopper or a blender with a chop setting. Chop them and add to the potato mixture. With kitchen scissors, snip the chives into 1/8" snippets and add to mixture. Mix in salad dressing, salt or Mrs. Dash (sparingly). Add pepper. Mix all ingredients carefully. Taste. Adjust salt and pepper to taste.
