PERSIAN PICKLES 
1/2 head cauliflower
1 lb. carrots
1/2 lb. celery
1/2 lb. cabbage
1/2 tbsp. turmeric
1/2 tbsp. mint
1 big jar cider vinegar

Wash all vegetables and cut them in small pieces. Let them drain for a few hours. Get a big jar and put all the vegetables in the jar. Put salt, turmeric and mint in. Add the vinegar and keep in jar for at least 4 weeks.
