PERSIAN POTATO OMELET 
1 med. onion, chopped
1 stick butter

Brown onions in butter. Remove onion. Add:

3 potatoes, thinly sliced

Brown on both sides. Layer:

2 to 3 sliced tomatoes

Onto potatoes. Combine

Juice of 1 lemon

with onions and layer on tomatoes. Beat:

6 to 8 eggs

Pour over vegetable layers. Cover and cook on low until set 15 to 20 minutes. Cut in wedges and serve.
