CHICKEN PROVINCIAL DISH 
1 red bell pepper
1 green bell pepper
1 onion, minced
2 or 3 cloves garlic
1 large can stewed tomatoes
3 boneless chicken breast
1/4 c. white wine
1 small can sliced black olives
1 small jar spaghetti sauce
5 or 6 leaves fresh basil, chopped

Slice bell peppers in rings and cut into bite-size pieces; set aside. Chop onion fine; set aside. Cut chicken breasts in bite-size pieces. Sauté chicken in small amount of olive oil. Add red and green peppers and onion in skillet and saut.

Add tomatoes, garlic, wine and olives. Simmer for 20 minutes. Add spaghetti sauce and simmer another 20 minutes. Serve over penne or bowtie spaghetti. Add Parmesan cheese as desired. A family favorite. Tom, Jamie, Michael and Wes all enjoy this.
