FRESH STRAWBERRY PUDDING | |
1 (12 oz.) box vanilla wafers 1/2 c. butter 1 1/2 c. powdered sugar 1 tsp. vanilla 1 c. chopped pecans 2 eggs 1 c. whipping cream or 1 (2 oz.) pkg. whipped topping mix prepared 1 (10 oz.) pkg. frozen sweetened strawberries, thawed Crumble wafers into fine crumbs. Put half in bottom of 13 x 9 x 2 inch pan. Whip butter, sugar, vanilla and eggs together until light and creamy. Spread over crumb mixture in pan. Whip the cream or topping mix and spread over butter mixture. Spread strawberries over whipped cream. Mix pecans and remaining wafer crumbs and sprinkle over strawberries. Chill overnight in refrigerator or put into freezer until firm but not frozen. |
