"PANZANELLA "BREAD SALAD" 
3 to 4 plum tomatoes
1/2 loaf French bread
1/2 bunch fresh basil
1/2 bunch parsley
1/4 oz. fresh garlic
1 tbsp. red onion
1/2 tsp. salt & pepper
1/4 c. extra virgin oil
1/2 tsp. red wine vinegar

Cut French bread in large squares. Brush with clarified butter. Lightly toast in 250 degree oven. Set aside. Chop basil and parsley. Mince garlic. Dice red onion, mix all ingredients together, except bread. Add bread just before serving. Serve at room temperature.
