NUTMEG LOGS | |
1 c. butter 3/4 c. sugar 1 egg 2 tsp. vanilla 1 tsp. ground nutmeg 1/2 tsp. rum extract 3 c. all-purpose flour Powdered sugar frosting Grated or ground nutmeg Beat butter in a large bowl with an electric mixer on medium speed for 30 seconds. Add sugar and beat until fluffy. Add egg, vanilla, nutmeg, and rum extract; beat well. Add half of the flour. Beat at low speed just until combined. Stir in remaining flour. Roll dough on a lightly floured surface to a 12 x 9 inch rectangle. Cut into 3 x 3/4 inch logs. Place 1 inch apart on an ungreased cookie sheet. Bake in a 350 degree oven for 10 to 12 minutes, a wire rack; cool completely. Frost with powdered sugar frosting. Sprinkle lightly with nutmeg. POWDERED SUGAR FROSTING: 2 c. 10X sugar, sifted 2 tbsp. butter, softened 1/2 tsp. vanilla Milk In a small bowl, stir together 2 cups sifted 10X sugar, 2 tablespoons softened butter, and 1/2 teaspoon vanilla until blended. Stir in milk, 1/2 teaspoon at a time, until desired spreading consistency. |
