PINEAPPLE REFRIGERATOR DESSERT 
2 c. milk
1 c. sugar
2 tbsp. cornstarch
2 eggs
1 env. unflavored gelatin
1 tbsp. cold water
3/4 c. pineapple juice and 1 lemon juice and grated rind
Lady fingers
Maraschino cherries
Whipped cream

Heat milk in top of double boiler. Combine sugar and cornstarch. Add milk; stir until thickened. Beat eggs, add to hot mixture, remove from heat. Soften gelatin in cold water. Add to milk mixture with pineapple juice, lemon rind and juice. Stir until gelatin dissolves.

Line a loaf pan with lady fingers (split open). Fill pan with alternate layer of pineapple mixture with lady fingers. End with pineapple mix. Chill overnight. Unmold on platter. Frost top and sides with whipped cream. Garnish with cherries. Serves 8.
