SPINACH CASSEROLE 
2 pkgs. chopped spinach, thawed
3 beaten eggs
6 tbsp. flour
2 c. cottage cheese
2 c. cheddar cheese, grated
1 tsp. salt
Pepper, optional

Beat the eggs and flour until smooth. Mix the rest of the ingredients and check for seasonings. Bake uncovered in a 2 quart casserole for an hour at 350 degrees. let stand a few minutes before serving. Serves 6 generously.
