SPINACH PIE | |
1 (10-12 oz.) pkg. spinach, washed, trimmed & chopped 1 stick butter 1 bunch green onions, chopped 1 handful parsley, chopped 1 c. ricotta cheese 1 c. feta cheese, cut into sq. pieces 4 eggs 1 tsp. dill weed 1 tsp. mace Salt Pepper 1 c. flour 1 c. water Preheat oven to 350 degrees. Squeeze all water from spinach. Melt butter in large skillet. Add onion and saute until softened. Mix in spinach, cheeses, 2 slightly beaten eggs, seasonings and parsley. Cool. Combine remaining 2 eggs, flour and water in medium bowl. Mix well to make thin batter. Grease an 8 x 8 inch deep baking dish, then coat it with some of the batter. Spread spinach mixture evenly over batter, dot with butter and spread remaining batter on top. Bake 50 minutes, until nicely browned. |
