CHRISTMAS COOKIES (BETTER THAN FRUITCAKE!) | |
1 stick unsalted butter, softened 1 c. sugar 1 lg. egg, beaten lightly 1 tsp. vanilla 1 1/4 c. unbleached flour 1/2 tsp. baking soda 1/2 tsp. salt 1 c. chopped pecans 1 c. semisweet chocolate chips 1 c. sweetened grated coconut 1 c. minced mixed glaced fruits You may add chopped dates or candied ginger (minced) In a bowl cream the butter, beat in the sugar, a little at a time, and beat the mixture until it is light and fluffy. Stir in the egg, the vanilla, the flour, sifted together with the baking soda and the salt, the nuts, the chocolate chips, the coconut, and the fruits and drop by teaspoons two inches apart onto buttered baking sheets. Bake the cookies in a preheated oven at 350 degrees for 15 minutes, or until they are golden. Transfer them to racks to cool. Makes about 64 cookies. |
