POTTSVILLE RELISH 
3 pt. green tomatoes
3 pt. red tomatoes
2 pt. cabbage
1 bunch celery (use coarse stalks & leaves)
4 lg. onions
4 sweet green & or red peppers
As much minced hot peppers as desired
About 1/2" piece of long red or green pepper

Chop vegetables and sprinkle with 1/2 cup salt. Mix thoroughly. Let set 4 hours or overnight. Diamond crystal plain salt. Combine and bring to boil (use larger than 6 quart pan.) 3 c. sugar 1/2 box mustard seed 1 tsp. cinnamon 1 tsp. ground cloves

Drain vegetables well. Rinse slightly and add to boiling mixture. Simmer 1 hour. Fill hot sterile jars with hot relish and seal immediately. Use jars that have coating inside cover.
