PUMPKIN BUTTER 
1 qt. pumpkin puree
2 - 2 1/2 c. sugar
2 tbsp. grated orange rind
1/2 c. orange juice
1 tsp. cinnamon
1/4 tsp. nutmeg

In large sauce pan combine pumpkin puree and sugar. Bring mixture to a boil, stirring. Mix in orange rind, orange juice and spices. Reduce heat. Simmer, uncovered, for 30 to 40 minutes until mixture is thickened. It will be thicker when it cools. Thoroughly wash 3 pint jars in hot water. Ladle pumpkin butter into jars. Cover and refrigerate.
