MANICOTTI 
1 (12 oz.) pkg. manicotti
2 c. (1 lb.) creamed cottage cheese
1 (8 oz.) pkg. cream cheese
2 (9 oz.) pkgs. chopped spinach, thawed & drained
2 eggs
2 tsp. salt
1 tsp. Italian seasoning
Dash pepper
6 tbsp. (3/4 stick) butter
6 tbsp. flour
1 tsp. dry mustard
4 c. milk
1 lb. cheddar cheese, grated (4 c.)

1. Cook noodles in salted water, place in cold water.

2. Mix cottage cheese, cream cheese, 1 package spinach, eggs, 1 teaspoon salt, Italian seasoning and pepper until well blended.

3. Melt butter. Stir in flour, 1 teaspoon salt and mustard. Cook, stirring constantly just until bubbly. Stir in milk,, continue cooking and stirring until sauce thickens and boils 1 minute, remove from heat. Stir in cheese until melted.

4. Blend 1 cup sauce into spinach, spoon into shallow baking dish, 13"x9"x2" to make a layer.

5. Fill noodles with cottage cheese mixture; place in rows in single layer over spinach mixture. Spoon remaining cheese sauce over and around noodles.

6. Bake at 350 degrees for 1 hour until bubbly.
