ZUCCHINI PANCAKES 
1 1/2 c. grated unpeeled zucchini, pressed dry between paper towels
2 tbsp. finely chopped onion
1/4 c. Parmesan cheese
1/4 c. flour
2 eggs
2 tbsp. mayonnaise
1/4 tsp. oregano
Salt & pepper to taste

Mix all ingredients. Melt 1 tablespoons butter in a 10 inch skillet. Spoon batter (2 heaping tablespoons, makes a nice size) into the hot skillet. Flatten, cook over medium heat until browned on both sides. Serve plain or top with tomato sauce and grated cheese or sour cream and chives. Makes a tasty accompaniment for chicken, roasts or chops. Serves 2-3.
