SWEET POTATO SOUFFLE 
2 lb. sweet potatoes or yams
3/4 stick butter
1 dash cinnamon or nutmeg
1 1/2 c. sugar
1 c. evaporated milk
1 c. corn flakes or Special K
1/2 c. chopped walnuts or pecans

Cook potatoes and mash as you would mashed potatoes. Add butter, cinnamon, sugar and milk. Mix well until smooth. Pour into greased casserole. Prepare topping with remaining ingredients. Sprinkle topping over potato mixture. Bake 25-35 minutes in 400 degree oven.
