STUFFED SWEET POTATOES 
6 med. sized sweet potatoes
3 tbsp. butter
1/2 tsp. salt
1/2 c. orange juice
1 c. drained, shredded pineapple
1/2 c. walnut meats
6 marshmallows
1 c. corn flakes, crushed

Bake potatoes in moderate oven, 350 degrees, about 45 minutes or until done. Scoop out insides; mash pulp with 2 tablespoons of butter, salt and orange juice. Stir in pineapple and nut meats. Refill shells with the mixture. Cut marshmallows into small pieces and spread over top. Sprinkle top with corn flakes which have been mixed with remaining melted butter. Return to oven and bake at 400 degrees for about 15 minutes. Serves 6.
