TIJUANA TORTE 
1-1 1/2 lb. ground round
1 (16 oz.) can stewed tomatoes
1 (4 oz.) can diced green chilies
4 (12") flour tortillas
1-1 1/2 c. sour cream
1 med. onion, chopped
1 (8 oz.) can tomato sauce
1 pkg. enchilada mix
1 lb. Cheddar cheese, grated

Brown ground round and onion in pan, drain fat; add stewed tomatoes, tomato sauce, green chilies and package enchilada mix. Simmer 10-15 minutes. Spray bottom and sides of 3 quart corning casserole dish with Pam. Cover bottom with thin layer of meat mixture. Cover with a tortilla layer, a meat layer, shredded cheese layer. Continue with layers until last layer of tortilla. Spread with 1-1 1/2 cups sour cream or (low calorie, low cholesterol substitute).

Bake at 350 degrees for 25 minutes, until cheese is bubbly. Serves 4-6. Lucky's carries a brand of cheese called Formag that has low salt and low or no cholesterol. It tastes better than most of them, and is available in Cheddar, Jack, muster and 1-2 other varieties.
