SCONES 
2 1/2 c. flour
1 1/2 tsp. sugar
3 tbsp. butter, cut into bits & chilled
1 egg, beaten to a froth
1 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1 tsp. sugar

Preheat oven to 400 degrees. In bowl, mix flour, baking powder, 1 tablespoon sugar, salt and butter. Using fingers, crumble mixture until it resembles coarse meal. Reserve 1 tablespoon of egg froth, combine remainder of egg with milk, and add to flour dough. Using fork, mix dough until it forms a ball. Place dough on floured surface and roll to 1/4 inch thickness. Cut into rounds, arrange on ungreased baking sheet. Brush tops of scones with egg and sprinkle with 1 teaspoon sugar. Bake in middle of oven until light brown, about 15 minutes. Makes 10 to 12 (2 1/2 inch) scones. Serve hot, split, with preserves and butter, or cold with whipped cream and preserves.
