CALICO CHEESE SOUP 
1/4 c. butter
3 tbsp. flour
2 c. hot milk
2 c. chicken broth
1/2 c. carrots, shredded
1/2 c. celery, chopped
2 tbsp. onion, chopped
1/2 lb. cheddar cheese, cubed

Cook vegetables in chicken broth until just tender. Melt butter and stir in flour until smooth. Stir in hot milk. Add broth and vegetables. Cook over medium heat about 10 minutes. Add cheese and stir until melted and blend well.
