CALICO CHEESE SOUP 
1/4 c. finely chopped carrots
1/4 c. celery
1 tbsp. minced onion
2 tbsp. butter
1 1/2 tbsp. flour
1 c. milk, scalded
1 c. chicken broth
4 oz. shredded Cheddar cheese
Croutons (garnish)

Boil veggies until tender; drain. Saute onion in butter. Stir in flour, milk, and broth. Cook and stir constantly until slightly thickened. Add cheese. Stir until melted. Add veggies and simmer 10 minutes.
