CARROT CAKE 
3/4 c. butter
3/4 c. honey
3 eggs
3 med. carrots
1 1/2 c. unsifted flour
1/2 tsp. vanilla
1/2 tsp. salt
3/4 tsp. cinnamon
3/4 tsp. nutmeg
1/2 c. chopped walnuts

Grease and flour two 6 inch round cake pans. Preheat oven to 350 degrees. In large mixing bowl cream butter, honey, and eggs together. Grate carrots, medium fine, and add with remaining ingredients to honey mixture. Stir until combined. Pour batter into prepared pans and bake 40 minutes or until top springs back when lightly touched. Turn out of pans and cool completely.
