CARROT CAKE 
2 1/2 c. sugar
2 c. flour
1 dozen eggs
1 tsp. baking soda
Allspice
cinnamon
Nutmeg
Mace
1/2 tsp. ginger (opt.)
2 tsp. salt
1 c. butter
1 lb. chopped walnuts
1 lb. raisins
2 lbs. carrots, grated
3 1/2 tsp. baking powder

Preheat oven to 350 degrees. Grease well and flour a 10" tube pan. Sift flour, soda and spices and baking powder and set aside. Cream butter and sugar with electric mixer. Add vanilla and eggs and beat until smooth and fluffy. At low speed beat n flour mixture, alternately with carrots until mixture combines. Add nuts and raisins and stir. Turn into prepared pan and bake 60 or 65 minutes or until done. Cool in pan 15 minutes and turn out on rack.
