CHICKEN FRIED RICE 
2 tbsp. oil
2 whole boneless chicken breast
1 1/2 c. instant rice
1/4 onion, chopped
1 clove garlic, minced
1 egg
Soy sauce

Prepare instant rice; set aside. Cut chicken breast into bite-size pieces. Heat 2 tablespoons oil in large 12-inch frying pan. Stir fry chicken pieces, onion, and garlic in oil, adding soy sauce to taste until chicken is done. Beat 1 egg. Add rice to chicken in pan. Pour beaten egg over, and stir-fry until egg is done, about 1 minute. Serves 4-5 people.
