MEXICAN SALAD 
1 lg. head lettuce
1 lb. Wisconsin Rat Cheese
1 (15 oz.) bottle Catalina dressing, chilled
1 (15 oz.) can pinto beans, washed and chilled
2 tomatoes, diced
1/2 finely chopped onion
1 sm. pkg. Fritos, crushed

Prepare lettuce as for any tossed salad. Drain and wash chilled beans. Add beans, tomatoes, onion, grated cheese and dressing. Chill 30 minutes to an hour before serving. Crush Fritos and add immediately before serving. Mix well.
