CRAB CAKES 
1 lb. crabmeat or cooked fish
2 tbsp. mayonnaise
1/2 tsp. mustard
2 eggs, slightly beaten
8 to 10 crushed saltines
Chopped parsley
1 onion (sauteed with 1 stalk chopped celery)

Mix well to form batter. Add crabmeat or fish. Pat into cakes and saute in butter until browned. May also be deep fried.
