LOBSTER (OR SEAFOOD) NEWBURG 
6 tbsp. butter
2 tbsp. flour
3 c. lobster meat, cut into chunks
1/8 tsp. nutmeg
Dash paprika
1 tsp. salt (pepper to taste)
3 tbsp. sherry
3 egg yolks
2 c. light cream

In double boiler melt butter; stir in flour. Add lobster, nutmeg, paprika, sherry, salt and pepper. Beat egg yolks and mix into cream. Stir into other ingredients. Heat on low until mixture thickens.

Optional: Sear lobster in a little butter before beginning.
