QUICK AND EASY TORTILLA CHIP CASSEROLE | |
This dish can be added to or taken from according to taste, but best results seem to be: To one Pyrex bowl 12 x 9 x 2, place tortilla chips approximately 1 inch deep (1/2 large bag should do). Cover with 1 large bell pepper cut into about 1/4 inch slivers. Cover pepper with 1 medium to large onion cut same as pepper. Cover everything with approximately 1 lb. chili or chili with beans. Repeat procedure for another layer. The contents should be at or over top of bowl. Bake at about 300 degrees allowing the chips to become saturated by taking up most of the moisture. By this time the vegetables should be done but not shrinking. Pull from oven and while hot add liberal sprinkling of your favorite grated cheese. Reheat in oven until cheese melts. Serve. This dish is good for parties or to feed a hungry family of 6 or more. If preferred hot, add chopped hot peppers to ingredients. |
