SPLIT PEA SOUP 
1 lb. green split peas
1 smoked ham bone
8 c. water
1 med. onion, diced
1 lg. potato, diced
2 med. carrots, diced
2 stalks celery, diced

Rinse and sort peas. Place in kettle with rest of ingredients. Bring to boil; cover and simmer for 3-4 hours until peas are soft. Add more water from time to time if necessary. Salt and pepper to taste.
